This stew is savory with a little sweetness, great to go with a green vegetable and a little rice. The beef is pre-cooked a day earlier using the simple and lazy clear water braising method, and this stew is just about getting the tender beef (and carrots) deliciously seasoned in its own broth, which takes only 10 minutes.
QUICK BEEF AND CARROT STEW

QUICK DISH/ NON-VEGETARIAN / DAIRY-FREE / GLUTEN-FREE
MAKE 4 servings PREPARATIONS 5 min COOKING 10 min
Ingredients
- 600g clear water braised beef, cut into bite size
- 6 to 8 carrots, cut into bite size
- 1 tbsp oil
- 1 to 2 tbsp soy sauce
- 1 tsp raw sugar
- 2 star anises *
- 2 dried chillis * (optional)
Method
- Heat a wok on high heat, add oil and sauté the chillis and star anises until fragrant, about 30 seconds.
- Add the carrot, stir a few times to coat with the oil, then add the beef, drizzle the soy sauce and sprinkle the sugar, stir to mix for 1 minute.
- Add the broth or hot water until it covers most of the content in the wok. Bring the liquid to boil, turn down the heat, cover the wok and let boil gently for 8 minutes or until the carrots are tender. Stir occasionally.
Recipe Notes
- Deseed or leave out the dried chilli for a milder taste.
- Star anises can be replaced with 1/4 teaspoon of 5 Spices, or can be left out.
