Golden, warm, sweet and full of earthy flavors, sweet potato and millet porridge, finished with a nut topping, makes a delicious and nourishing breakfast or snack.
This porridge is one of my childhood breakfast staples. Little did I know that one day the unassuming millets would be put on the pedestal of ancient grains and humble sweet potatoes become the acclaimed superfood! Ok, more the reasons to enjoy the porridge!
SWEET POTATO AND MILLET PORRIDGE
PREPARATION 2 minutes COOKING 15 minutes
- 1 medium sweet potato, washed and cut into bite sized cubes
- 100g of millets
- nut toppings (optional)
- In a medium pot, add the sweet potato pieces, millets, and 3 cups of water. Bring to a boil, turn the heat to medium and let boil gently for about 15 minutes or until both ingredients are soft. Add nut toppings if using. Serve.
- Add more water towards the end of cooking if you prefer a thinner porridge. Stir until the texture is consistent before serving.
